At The Caledonian Edinburgh, our kitchens blend Scottish heritage with modern culinary craft. We are seeking a Restaurant Sous Chef to support the Head Chef in leading the brigade, delivering exceptional food quality, operational excellence and a consistently elevated dining experience

The Person

An experienced kitchen leader with strong supervisory or management capability
Calm, organised and confident running service and deputising for the Head Chef
Skilled in menu execution, specification compliance and operational consistency
A natural mentor who develops teams through coaching, feedback and
Knowledgeable in HACCP, food safety, kitchen systems and risk management.

The Role

Support the Head Chef in leading kitchen operations and team performance
Oversee food preparation, cooking and presentation to luxury brand standards
Maintain productivity, food cost control and adherence to specifications
Ensure safe, compliant and efficient kitchen operations across all sections
Champion training, succession planning and continuous improvement.

Key Responsibilities

Lead service, guiding Chef de Parties, Commis and kitchen porters
Maintain stock levels, commodity checks, waste control and supplier compliance
Oversee cleaning schedules, maintenance logs and safety documentation
Brief service teams on product availability, specials and recommended dishes
Ensure all dishes meet specification, costings and brand presentation standards.
