About this role
Key Responsibilities
Prepare and develop signature sushi sauces (eel sauce, spicy mayo, ponzu, teriyaki, miso-based sauces, etc.)
Balance flavors (sweet, salty, umami, spicy, acidic) to complement fresh seafood
Ensure consistency in taste, texture, and presentation
Collaborate with head sushi chef to create new menu items
Maintain food safety and sanitation standards
Monitor ingredient freshness and quality
Control portioning and minimize waste
Required Skills
Strong knowledge of Japanese cuisine and sushi preparation
Understanding of flavor pairing and sauce emulsification
Knife skills and attention to detail
Creativity in developing fusion and specialty sauces
Ability to work efficiently in a fast-paced kitchen
Knowledge of food safety regulations
